The holidays just aren’t the same to me without a slice of warm pecan pie and ice cream with all of it’s caramel-y goodness!
And even when the holidays are over….any time is right for this yummy, easy recipe!

Ingredients
- 3 eggs slightly beaten
- 1 c. light corn syrup
- 1 c. sugar
- 2 Tbsp. melted margarine or butter
- 1 tsp. vanilla
- 1 ½ c. pecan halves
- 1 unbaked pie shell

Instructions
- Preheat oven to 350*.
- Mix first 5 ingredients until well blended.
- Stir in pecans.
- Pour into pie shell.
- Bake 50-55 min or until knife inserted half-way between center and crust comes out clean.
- Cool before cutting.
