I first learned of “Malibu Chicken” years ago when my family used to eat at Sizzler Steakhouse. This baked version is even better!
You could use frozen pre-breaded chicken patties if desired. I love the actual chicken breasts. I often have the butcher cut the chicken breasts in half for me while at the store as I finish my shopping. Then they are ready to go!
You can use any kind of cheese you want. White cheddar, provolone, swiss, and mozzarella are all great! If you don’t have slices, feel free to use fresh shredded cheese on top!

Ingredients
- 4 boneless skinless chicken breasts cut in half lengthwise (or 8 small)
- 2 egg whites
- 1 Tbsp. water
- 1 c seasoned bread crumbs
- 1/4 c dry grated parmesan cheese
- 1 tsp. garlic salt
- 1/4 c butter or margarine melted
- 8 slices ham
- 8 slices provolone or white cheddar cheese

Instructions
- Preheat oven to 450*.
- Mix egg white and water in a small bowl. Mix bread crumbs, grated parmesan cheese and garlic salt in another small bowl.
- Cut chicken breasts in half lengthwise, or, using a meat tenderizer, pound chicken breasts to desired thickness, then cut in half.
- Dip each chicken breast in egg white mixture and then in bread crumb mixture, coating evenly. Place on baking sheet sprayed with cooking spray.
- Brush or drizzle the top of each chicken breast with melted butter.
- Bake for 16-20 min. or until cooked through. (Turn half-way through cooking if desired.)
- Remove from oven. Place one slice of ham on each chicken breast and then cover with one slice of cheese.
- Return to oven for 2 minutes or until cheese is melted.
