Cinnamon Chip Waffles with Vanilla Syrup

After chocolate, once of my favorite dessert flavors is cinnamon! And my favorite breakfast food is waffles, so I decided, why not combine the two? The result was definitely a home run! These waffles are like dessert for breakfast and will remind you of a cinnamon roll!

I have not been able to find cinnamon chips at my local store recently. I have had to buy them on-line, and I bought in bulk to get a better deal. I LOVE cinnamon chips to go in muffins & cakes, and also as a garnish for cakes and cupcakes. I usually buy Hersheys, but there are some other varieties on-line that you can buy in bulk that might be just as good. I just haven’t tried them.

With this recipe, you could maybe get away with not beating the egg whites and adding them separately, but it makes the waffles so much more fluffy that it’s definitely worth the little bit of time it takes to do this step! I also like using bread flour. You can use regular flour too, and they’ll still be delicious! I just like the consistency when made with bread flour a little bit better. You can substitute the buttery vanilla syrup for my Cream Cheese Syrup, if you prefer! Also, if you like these, try out my recipe for Cinnamon Roll Waffles!

Cinnamon Chip Waffles with Vanilla Syrup

Instructions
  1. Heat waffle iron.
  2. Separate eggs and put yolks in a large mixing bowl and bowl and whites in a small mixing bowl. With an electric mixer, beat egg whites until foamy and white peaks start to appear. Set aside.
  3. Beat eggs, add melted butter and milk and beat until frothy.
  4. Add flour, baking soda, salt, brown sugar and cinnamon and and mix until well-blended.
  5. Fold in foamy egg whites and then cinnamon chips.
  6. Pour onto greased, hot waffle iron. Use a spatula to evenly distribute batter before closing lid of waffle iron. Cook as directed on waffle iron or until waffle is golden brown on edges.
  7. While waffles are baking, make vanilla glaze by pouring powdered sugar into a small bowl or pyrex measuring cup. Add melted butter and vanilla. Stir with a wisk until incorporated. Add water one tablespoon at a time and stir with wisk until smooth. (Add more water if you desire a thinner consistency or less if you want a thicker consistency.)
