Chocolate-Covered Strawberries
Strawberries with a rich chocolate coating that is not too bitter, and not to sweet!
Instructions
  1. Wash strawberries and dry completely.
  2. Set out 2 cookie sheets and spray with cooking spray or cover with parchment paper.
  3. Cut butter into 1/2 inch squares. Layer chocolate chips and butter squares in glass bowl or glass Pyrex measuring container. Microwave for 1 minute. Stir with a whisk until lumps disappear and consistency is smooth. (Start out with first measurement and if lumps will not disappear or chocolate is not dipping consistency, melt 1 Tbsp. butter and while still hot, add slowly and stir until desired consistency.)
  4. Holding strawberry by the green leafy end, dip strawberry into chocolate and immediately place on cookie sheets/parchment paper. Repeat with each strawberry.
  5. Refrigerate for 20 min. to harden chocolate or until ready to serve. Place on serving platter. Refrigerate leftover strawberries.
