  1. Pour olive oil and garlic into a frying pan. Saute’ over medium high heat for a minute. Add carrots. Cover and cook for 10-12 minutes (or until desired tenderness), turning the carrots periodically, allowing them to blacken on each side.
  2. Add butter, salt and pepper to taste and toss to distribute evenly.
