Blackened Carrots Sautee’d with Olive Oil and Garlic

I made these carrots one day because I forgot to start cooking the carrots earlier and I needed a way to cook them faster. We were having company over, so I prayed they would turn out ok! They were a hit and I have made them several times since!

Instructions
  1. Pour olive oil and garlic into a frying pan. Saute' over medium high heat for a minute. Add carrots. Cover and cook for 10-12 minutes (or until desired tenderness), turning the carrots periodically, allowing them to blacken on each side.
  2. Add butter, salt and pepper to taste and toss to distribute evenly.
