I made these carrots one day because I forgot to start cooking the carrots earlier and I needed a way to cook them faster. We were having company over, so I prayed they would turn out ok! They were a hit and I have made them several times since!

- 1 Tbsp olive oil
- 1 16 oz pkg carrot "chips" or 1 lb sliced carrots
- 2 tsp fresh minced garlic or 2 cloves garlic, minced
- 1 Tbsp butter
- sea salt
- pepper

Instructions
- Pour olive oil and garlic into a frying pan. Saute' over medium high heat for a minute. Add carrots. Cover and cook for 10-12 minutes (or until desired tenderness), turning the carrots periodically, allowing them to blacken on each side.
- Add butter, salt and pepper to taste and toss to distribute evenly.
