Cinnamon Roll Cake with Cream Cheese Frosting

Cinnamon Rolls are one of THE ultimate comfort foods…..but I just don’t have time to make them very often. This cake will satisfy your cinnamon roll craving and can be made in about 45-50 minutes, including baking time!

Oh yeah…. 🙂

The cake batter will be very thick, so I like to run my butter knife through the cake batter both directions so that the cinnamon topping is marbled well and not just sitting on top of the cake once it is baked.

You could probably use a yellow cake mix for this as well…I just like the look and taste of it better with a white cake mix. You can also use oil instead of the butter in the cake recipe, but I prefer butter for the taste. You can also substitute applesauce for the butter to make it healthier. But, the rest of the cake is not exactly healthy either, so I just call it a splurge and go all out on this one!

Instructions
  1. Preheat oven to 350*. Set out cream cheese to come to room temperature.
  2. Beat cake mix, eggs, butter, pudding mix and water with electric mixer on low until smooth. Beat on medium speed for 2 min, stirring and scraping bowl occasionally. Pour into greased pan.
  3. Combine brown sugar and cinnamon and mix well. Sprinkle over cake batter. Gently marble by “cutting through” the topping and cake batter with a butter knife or icing spatula.
  4. Bake for 29-35 min or as directed on package or until toothpick inserted through center of cake comes out clean.
  5. During last 10 minutes of baking, beat cream cheese and butter until well blended. Add 1 cup of powdered sugar and beat until creamy. Add the rest of the powdered sugar and beat until incorporated well. Add vanilla and beat until creamy. Add milk one tablespoon at a time until at desired consistency.
  6. Drizzle frosting over cake and serve while warm.
