I find it a fun challenge to find tasty ways to make my favorite recipes low-fat. And since I love waffles (which you can see by the numerous waffle recipes I have posted), I decided to create a tasty waffle recipe that is lower in fat. This recipe succeeds in creating lower fat version of a tasty original as far as the waffle itself is concerned. What you top it with is up to you. What happens in your kitchen stays in your kitchen! 🙂

You don’t have to separate the eggs and beat the egg whites separately….but I feel like it makes a real difference in how fluffy the waffles turn out. And with a mixer, it doesn’t really take that much longer. Once you have the egg whites beaten until there are soft, white peaks, set aside. Beat the egg yolks, milk and vanilla until frothy. Beat in the dry ingredients. Fold in the egg whites with a spatula. Do not mix in with a mixer! You want the egg whites to stay fluffy because that transfers to a fluffier waffle!
Pour batter onto a waffle iron sprayed with cooking spray and cook until your waffle iron indicates it’s ready or until steaming stops. Make sure to spray the waffle iron before EACH waffle since there is no butter or oil in this batter, or you’ll be scraping your waffle iron like you do your car window after a road trip!
Top with desired toppings!

- 2 eggs
- 2 c milk
- 1 tsp Vanilla
- 2 c all purpose flour
- 1 Tbsp sugar
- 3 tsp baking powder
- ½ tsp salt
Ingredients

- Heat waffle Iron. Separate eggs, putting egg whites in a small mixing bowl and egg yolks in a large mixing bowl.
- Beat egg whites in a small mixing bowl until soft peaks appear. Set aside.
- Beat egg yolks, milk and vanilla until smooth.
- Beat in dry ingredients until well blended.
- Gently fold in egg whites with rubber spatula or wooden spoon.
- Spray waffle iron with cooking spray . Pour batter using a measuring cup onto center of hot greased waffle iron. Bake until steaming stops, about 5 min. Remove waffle carefully. Repeat with the rest of the batter making sure to spray waffle iron with cooking spray before adding batter for each waffle.
Top with desired toppings.
