As our family has grown, I had just about given up making mashed potatoes because I didn’t have a pot large enough to boil as many as I needed without them boiling over.
Enter: my instant pot.
Goodbye potato flakes! Hello real potatoes! These will be the easiest mashed potatoes you will ever make!
Instructions
- Wash potatoes. Peel as desired. (I leave about 1/3 of the peel on.)
- Place trivel in Instant Pot. Add water. Place potatoes on top of trivet and sprinkle 2 tsp salt over potatoes. Close and seal instant pot. Make sure pressure valve is set to sealing and not venting.
- Press Pressure Cook and set timer for 12-18 min, depending upon size of potatoes.
- When instant pot has come to pressure, turn valve to venting to release steam. (Make sure to keep your skin away from venting steam and make sure it vents away from cabinets.)
- Open instant pot. Drain water.
- Add milk and mash potatoes with a potato masher or hand mixer directly in the pot, or move potatoes to a stand mixer, and mix, adding milk to desired consistency. Salt to taste. Add butter if desired.
