This recipe rivals pancakes in restaurants and is so very easy that I think I may never buy pancake mix again! And the great thing is that I know exactly what is in these tasty hot cakes!
Even when I forget the vanilla….:)
Try it with my 10 minute homemade pancake and waffle syrup or with fresh fruit and my 15 minute candied pecans!

Ingredients
- 1 1/2 c all purpose flour
- 3 1/2 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp granulated sugar
- 1 1/4 c milk
- 1 egg
- 3 Tbsp butter melted
- 3/4 tsp vanilla extract

Instructions
- Melt butter in microwave and set aside.
- Mix together flour, baking powder, salt and sugar in a bowl.
- Blend egg, milk, vanilla and butter with a whisk until well blended.
- Using a 1/4 c. measuring cup, scoop and pour batter onto hot, greased skillet or fying pan. Cook until bubbles start to appear. Turn and cook on the other side until golden brown.
- Serve with desired toppings.
Recipe Notes
These pancakes are great with fresh fruit, whip cream and my 15 minute candied pecans or my 10 minute homemade syrup. They can be frozen and heated up in the toaster for a quick breakfast.
