Chocolate Salted Caramel Cookies made with a Cake Mix

I have fallen hard for salted caramel lately. Pair it with a chewy chocolate cookie and you just can’t go wrong!

Instructions
  1. Preheat oven to 350*.
  2. Using a mixer, blend cake mix, eggs, and oil until well blended. Stir in nuts and chocolate chips. Using rounded 1 Tbsp dough for each ball, shape into small balls. Place on ungreased cookie sheet. Press slightly to flatten. Push 4-5 caramel bits onto the top of each cookie.
  3. Bake 8-10 min. Remove from oven.
  4. Sprinkle with coarse salt.
  5. Let cookies sit for 3-4 minutes on cookie sheet. Move to a cooling rack.
  6. Store in an airtight container.
Recipe Notes

You can freeze this cookie dough  I prefer shaping them into balls and putting the balls on a greased cookie sheet. Put the cookie sheet in the freezer for 20-30 minutes until balls keep their shape, then transfer to an airtight container (I use a freezer Ziploc bag) and freeze until ready to use. I will remove a few at a time and add a few minutes to the baking time if still frozen. It's a great way to have a treat or dessert ready in a flash! You can also put all of the cookie dough (or bake some and freeze the rest) in an airtight container until ready to use. Then defrost and shape when you are ready to bake.
