Warm, gooey chocolate chip cookies are a little bit of heaven in my book! But sometimes, I just don’t have the patience or time to shape all the cookies and bake a bunch of batches. That’s why I am so glad these cookie bars entered my life many years ago! I originally got the recipe from my mother-in-law, but I have modified it over the years. She called her recipe “Congo Squares” (not sure why) and my family still calls them by the same name.
First I set the oven to 350* to pre-heat. I melt the butter first and let it sit while I beat the eggs, and then add the sugars. This way the butter has time to cool a bit and it won’t cook the eggs. Then I mix in the dry ingredients and the vanilla. Once that is well blended, I stir in the chocolate chips. I actually prefer to use chocolate chunks, but chocolate chips work well too. You can also use a combination of different baking chips, such as chocolate chips or chunks, butterscotch chips, or caramel chips as well. Pour into a greased 9×13 pan.
Bake for 30 min or until golden brown.
These are great served warm with a glass of milk or with vanilla ice cream. Heaven in a 2 inch square!

- 3 eggs
- 1½ c brown sugar
- ½ c granulated sugar
- 2/3 c margarine or butter melted
- 2¼ c flour
- 2½ tsp baking powder
- 1/2 tsp salt
- 1 tsp Vanilla
- 1 12 oz package semi sweet chocolate chunks or chips

- Preheat oven to 350*.
- Combine first 8 ingredients in order given, mixing well with an electric beater until well blended.
- Stir in chocolate chunks/chips.
- Spread in greased 9x13 pan.
- Bake at 350* for 30 min.
- Cool at least 10 min.
- Cut into squares.
